I wish I could tell you this delicious dinner was a result of laborious chopping, stirring and simmering.
I wish I could tell you that when my friend sent me a message informing me she’ll be over for dinner today, I, well prepared for surprise guests as always, sauntered into the kitchen and began preparing for a luxury multiple-course dinner using exotic spices, fresh herbs and lashings of ghee, saffron, star anise and various other lavish-sounding ingredients.
I really wish I could tell you I toiled over this recipe to make it creamy, rich and falling apart to the touch by spending hours stirring the masala and simmering the chicken over low heat. I really do.
The truth is, everything was dumped into the slow cooker and forgotten. The truth is, I had an exam the next day and I didn’t have the time to prepare a luxury five-course meal. The truth is my fridge was virtually empty that faithful day.
The honest truth is: this is my laziest recipe to date.
It’s so lazy I’m slightly embarassed posting this. The only reason I am sharing this with you all is because the results are so delicious! The gravy of the masala is so thick and bursting with flavour, the chicken breast becomes so juicy and tender and the fragrant aroma in the house is so enticing that it would be a huge injustice not the share it with you all. Hence, I won’t speak much about the recipe. I will let the pictures do the talking.
I’ll just leave you all with the following humble request.
Please, never tell my Mother or my Mother-in-law that I used a jar of pasta sauce for a curry. And please don’t tell them I made it for my husband and a guest. Please.
